Love and chocolate

This week for a change, I will not follow the rule of proposing five meals for the weekday evenings. In fact, quite a few of you have asked me about how to make a special dessert for Valentine’s Day.

So here are my Melt-in-your-mouth Chocolate Cakes.

This simple dessert can be made in a few quick steps and the best part is that it can be prepared even a week in advance. Having said that, the baking part is crucial, because the secret of the cake’s success lies in its nice outer crust and its smooth and runny inside. So make sure you keep an eye on your oven during the seven minutes of baking.

You should also be sure to use a good quality dark chocolate that contains at least 60% cocoa. Callebaut and Valrhona are two excellent brands.

Lastly, since this dessert is very high in calories, it should not be preceded by a heavy meal. A Chinese fondue, for example, would do the trick. Yes, dark chocolate has a very high antioxidant content and it is good for health, but it also contains lots of fat, so don’t overdo it.
