A salad of cabbage and carrots in a spicy mayonnaise-yogurt dressing.

A «Cole Slaw» is a salad of finely sliced raw cabbage in a seasoned mayonnaise vinaigrette. Apparently this name derives from the Dutch «koolsla» for «cabbage salad».

Ingredients

2 tbsp mayonnaise 28 g
2 tbsp yogurt, plain, 2% 30 g
1 tbsp wine vinegar 15 mL
1 tsp Dijon mustard 5 g
1 tsp horseradish 5 g
2 1/2 cups green cabbage, or Savoy, thinly sliced 200 g
1 carrots, grated 100 g
2 green onions/scallions, thinly sliced
1 pinch salt [optional] 0.2 g
ground pepper to taste [optional]

Before you start

A mandolin will make slicing the cabbage easier.

Method

  1. In a large bowl, add the mayonnaise, yogurt, vinegar, mustard and horseradish.
  2. Prepare the cabbage, carrots and green onions. Thinly slice the cabbage and onions. Peel and grate the carrots. Add the vegetables to the bowl, add salt and pepper, then mix well. Cover with some plastic wrap and chill in the refrigerator for at least 1 h.
  3. Adjust the seasoning and serve.

Observations

Keep up to 1 day in the refrigerator.

Love this recipe! The flavoring was great followed the recipe exactly no need to adjust anything. Will be making again and again!

This is a wonderful recipe as it does not contain added sugar like most coleslaw recipes. It is also lower in fat thanks to the yogurt.
