Served this to a group of 250, yes, that is correct, 250. It worked out great. Nice taste, looked great (so colourful) and a lot of people went for seconds. Great for a hot summer night dinner and a great addition to a buffet for a large group. Nice one. And it's healthy...can't beat that!
I made the a different dressing, 1tbs lemon juice, 3 tbs olive oil, s&p, and 1/2 ts oregano. Very good combo with the beets, my hubby doesn't like mustard. I only used 1 green apple and 3 med sized beets.
A nice colourful side dish, and super quick to make.
